These moist and hearty muffins start any day off right. Dress them up with a spoonful of your favourite fruit jam or enjoy them "au naturel". Nothing beats the natural goodness of our Grainery Date Bran Muffins. Enjoy!

1 cup chopped dates 250 ml
3/4 cup Red River Cereal 175 ml
1 1/2 cups hot water 375 ml
1/2 cup packed brown sugar 125 ml
1 tsp lemon juice 5 ml


Batter:
1 1/2 cups natural bran 375 ml
3/4 cup ROBIN HOOD All Purpose Flour 175 ml
1 1/4 tsp baking soda 7 ml
1 tsp salt 5 ml
1 egg 1
1/2 cup packed brown sugar 125 ml
1 cup buttermilk 250 ml
1 tbsp oil 15 ml


Filling:
1. COMBINE all ingredients in saucepan. Simmer 5 minutes. Set aside to cool.

Batter:
2. COMBINE first 4 dry ingredient in large mixing bowl. Beat remaining ingredients together to blend. Add with date mixture to dry ingredients. Mix well. Spoon into 12 greased muffin cups.
3. BAKE at 375°F (190°C) for 20 to 25 minutes, or until top springs back when lightly touched.

MAKES 12 muffins.
